Slow Cooker Soulful BBQ Chicken Thighs
Boneless skinless chicken thighs are packed with flavor and are very versatile. Mix a quick sauce to top the chicken and you’ll have a tasty meal in no time.
Ingredients
6 boneless, skinless chicken thighs
1 medium onion, thinly sliced
3 cloves garlic, minced
1 cup barbecue sauce
1/4 cup honey
2 tbsp apple cider vinegar
1 tbsp Worcestershire sauce
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1/2 tsp cayenne pepper (optional, for heat)
Salt and black pepper to taste
1/4 cup chicken broth
For Garnish (Optional)
Fresh parsley, chopped
Sliced green onions
Instructions
Season the chicken thighs generously with salt, pepper, smoked paprika, garlic powder, and onion powder.
Place the sliced onions and minced garlic at the bottom of the crockpot. Lay the seasoned chicken thighs on top.
In a small bowl, whisk together barbecue sauce, honey, apple cider vinegar, Worcestershire sauce, and chicken broth. If you like a bit of heat, add the cayenne pepper. Pour the mixture over the chicken.
Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and infused with flavor.
Once done, remove the chicken and set it aside. If you prefer a thicker sauce, pour the liquid from the crockpot into a saucepan and simmer until it reduces to your desired consistency. Pour the sauce back over the chicken or serve it on the side.
Sprinkle with fresh parsley or green onions for a pop of color and added flavor.
Serving Suggestions
Serve over fluffy white rice, creamy mashed potatoes, or buttery cornbread.
Pair with collard greens, mac and cheese, or a crisp coleslaw for a complete soul food experience. Enjoy!
