Crockpot Kale and Quinoa Soup

Crockpot Kale and Quinoa Soup Recipe
Ingredients:
1 lb Andouille sausage
1 medium onion, diced
3 garlic cloves, minced
3/4 cup quinoa, rinsed
4 cups fresh kale, stems removed and leaves chopped
6 cups chicken broth (or vegetable broth for a vegetarian option)
1 can (14.5 oz) diced tomatoes, with juices
1 cup milk (whole, 2%, or a dairy-free alternative, like almond or oat milk)
2 tbsp all-purpose flour or cornstarch (for thickening)
1 tsp smoked paprika
1/2 tsp red pepper flakes (optional, for heat)
Salt and black pepper, to taste
1 tbsp olive oil
Fresh parsley, for garnish (optional)
Instructions:
In a skillet, heat the olive oil over medium heat. Add the sausage and cook, breaking it into small pieces, until browned. Transfer the cooked sausage to the crockpot.
Add diced onion, minced garlic, rinsed quinoa, chicken broth, diced tomatoes, smoked paprika, and red pepper flakes to the crockpot. Stir to combine.
Cover and cook on low for 4–5 hours or on high for 2–3 hours, until the quinoa is tender and fully cooked.
In a small bowl, whisk together the milk and flour (or cornstarch) until smooth. About 30 minutes before serving, stir this mixture into the soup along with the chopped kale. Allow the kale to soften and the soup to heat through.
Taste the soup and adjust seasoning with salt and black pepper as needed. Garnish with fresh parsley, if desired. Serve warm with buttermilk biscuits or crackers for a cozy meal.
