This one-pot jambalaya is packed with bold flavors and hearty ingredients, perfect for meal prep or family dinners!

Ingredients (Serves 6-8)

  • 1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

  • 12 oz (340g) kielbasa sausage, sliced

  • 1 tbsp olive oil

  • 1 medium onion, diced

  • 2 celery stalks, diced

  • 1 green bell pepper, diced

  • 4 cloves garlic, minced

  • 1 tbsp Creole seasoning (adjust to taste)

  • 1 tsp smoked paprika

  • 1/2 tsp cayenne pepper (optional, for extra heat)

  • 1 cup (200g) long-grain white rice

  • 1 cup (240ml) tomato puree

  • 1 can (14.5 oz/400g) crushed tomatoes

  • 2 cups (480ml) chicken broth

  • 1 bay leaf

  • 1 tsp dried thyme

  • 1 tsp dried oregano

  • Salt and black pepper, to taste

  • Chopped parsley, for garnish

Instructions


Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chicken pieces and kielbasa sausage. Cook for 5-7 minutes, stirring occasionally, until the chicken is lightly browned and the sausage is slightly caramelized. Remove the meat from the pot and set aside.

In the same pot, add the onion, celery, and bell pepper. Cook for 4-5 minutes until the vegetables are softened. Stir in the garlic and cook for an additional minute.

Stir in the Creole seasoning, smoked paprika, cayenne pepper, and rice. Cook for 1-2 minutes, stirring frequently to coat the rice in the spices.

Pour in the tomato puree, crushed tomatoes, and chicken broth. Stir well to combine. Add the bay leaf, thyme, and oregano. Bring the mixture to a simmer.

Return the browned chicken and sausage to the pot. Reduce the heat to low, cover with a lid, and let simmer for 20-25 minutes. Stir occasionally to prevent the rice from sticking to the bottom.

After 25 minutes, check that the rice is tender and the liquid is mostly absorbed. If needed, add a splash of water or broth and cook for an additional 5 minutes. Remove the bay leaf and adjust seasoning with salt and pepper.

Garnish with chopped parsley and serve warm. This dish pairs well with a nice salad, a buttermilk biscuit or a side of cornbread. Enjoy!
