Creamy Salmon and Spinach Pasta

Creamy Salmon and Spinach Pasta
Ingredients:
8 oz (about 2 cups) pasta (e.g., penne, fettuccine, or linguine)
2 tbsp olive oil
3 cloves garlic, minced
1 small onion, finely chopped
1 cup cherry tomatoes, halved
5 oz canned salmon, drained and flaked
2 cups fresh spinach leaves
1 cup heavy cream
½ cup grated Parmesan cheese
1 tsp lemon zest
1 tbsp fresh lemon juice
1 tsp dried Italian seasoning
Salt and black pepper, to taste
Optional: Red pepper flakes for a kick
Fresh parsley, chopped, for garnish
Instructions:
Bring a large pot of salted water to a boil and cook the pasta according to the package instructions. Reserve ½ cup of pasta water before draining. Set the pasta aside.
Heat olive oil in a large skillet over medium heat. Add the minced garlic and chopped onion, sautéing until fragrant and translucent (about 2-3 minutes).
Add the cherry tomatoes and cook until they soften and release their juices (about 5 minutes).
Stir in the canned salmon, breaking it into smaller pieces. Add the fresh spinach, cooking until wilted (1-2 minutes).
Lower the heat and pour in the heavy cream. Stir well to combine, then add Parmesan cheese, lemon zest, lemon juice, and Italian seasoning. Cook for 2-3 minutes, stirring until the sauce thickens slightly.
Add the cooked pasta to the skillet and toss to coat it evenly with the sauce. If the sauce is too thick, use the reserved pasta water to thin it out to your desired consistency.
Taste and season with salt, black pepper, and optional red pepper flakes. Garnish with fresh parsley, scallions and more Parmesan if desired.
