Southern Dirty Rice

This version of dirty rice uses sautéed long-grain rice for an aromatic and toasty base, giving the dish an added depth of flavor. It’s perfect as a main dish or side that’s guaranteed to impress! 🥘🌿

Southern Dirty Rice

This dish never sticks around long in my house.  What makes this dish “dirty?” The flour! It's a one-skillet wonder that’s easy to prepare, yet bold in flavor! 🥘🌿

Ingredients

  • 1 cup long-grain rice

  • 2 cups chicken broth (plus more if needed)

  • 1/2 pound ground pork

  • 1/2 pound sausage (mild or spicy, your preference)

  • 2 celery stalks, finely diced

  • 1/4 cup all-purpose flour

  • 1 tablespoon olive oil or butter

  • Salt and black pepper, to taste

  • Fresh parsley, chopped, for garnish

    Instructions

    1. Heat 1 tablespoon of olive oil or butter in a medium saucepan over medium heat.

      Add the long-grain rice and sauté for 2–3 minutes, stirring frequently, until the rice is lightly toasted and fragrant.

    1. Add the chicken broth to the saucepan. Stir well, bring to a boil, then reduce the heat to low. Cover and let the rice simmer for 15–20 minutes, or until the liquid is absorbed and the rice is tender. Remove from heat and set aside.

    1. In a large skillet, cook the ground pork and sausage over medium heat, breaking it into small pieces with a spatula. Cook until browned and fully done, about 6–8 minutes. Remove the meat from the skillet and set aside, leaving a bit of the fat in the pan.

    1. In the same skillet, add the diced celery to the rendered fat (or add a small amount of olive oil or butter if needed). Cook for 3–4 minutes until softened.

    1. Sprinkle the flour over the cooked celery. Stir continuously for 2–3 minutes to create a roux, allowing it to develop a light golden color.

      Gradually whisk in 1/2 cup of chicken broth (or water, if preferred) to create a smooth, slightly thickened sauce.

    1. Return the cooked pork and sausage to the skillet with the roux and celery mixture. Stir to combine.

      Add the cooked rice to the skillet and mix everything together until evenly coated. Cook for 2–3 minutes to allow the flavors to meld. Season with salt and black pepper to taste.

    1. Transfer the dirty rice to a serving dish and garnish with fresh chopped parsley.

      Serve warm and enjoy a flavorful, comforting meal!
